Foods

Foods 10 Introductory
 6 Credits
Prerequisite: None
In foods we go from basic food groups to exploring the ethnic and exotic.  Some say we even get a bit cultural.  But, at the very least, we have fun discovering what we should or should not eat.  Did we mention the awesome desserts?  And after all the flipping, flopping and frying – you get to eat your own creations!

Foods 20 Intermediate
5 Credits
Prerequisite: Foods 10
The intermediate level course helps students build on the competencies developed at the introductory level.  New food topics such as Fish & Poultry, Yeast Breads and Rolls are explored.  The student’s skill in food preparation is developed at a more complex level with an emphasis on time management.

Foods 30 Advanced
5 Credits
Prerequisite:  Foods 20 Intermediate or Business of Foods 20
This course gives students the opportunity to develop their own creativity and flair in food preparation and presentation.  Advanced skill levels are necessary to prepare students for entry into the work place or a post-secondary program.  The students will have the opportunity to attend a field trip to NAIT.

Business of Foods 20
5 Credits
Prerequisite: Foods 10
This exciting, new intermediate course is designed for students who want to take foods to the next level.  You will learn the latest food techniques (chocolate making, cake designing etc) which help to inspire you to create your own product, make a business plan then market and sell your product at the school.  You will study other food businesses and understand why they are so successful.  We will be planning and catering big events at the school and learn how to be more efficient when serving a large number of people.

Business of Foods 30
5 Credits
Prerequisite: Business of Foods 20
This advanced level course will build upon the techniques learned from Business of Foods 20 class.  You will be able to plan catering events at the school as well as run the LaSerte’s Desserts business in the school.  You will learn what it takes to manage people, create menus, place food orders and come up with new recipes and presentation ideas for our successful food businesses.
